If you pre-washed all your vegetables (See my <a href=\"https:\/\/taneaux.com\/blog\/mama-taneaux\/2021\/04\/09\/1-3\/\" data-type=\"URL\" data-id=\"https:\/\/taneaux.com\/blog\/mama-taneaux\/2021\/04\/09\/1-3\/\" target=\"_blank\" rel=\"noreferrer noopener\">previous note<\/a>), it is even quicker! It is also so versatile that you can make it as a light accompaniment, or a main dish, and change the taste from Italian, French, Japanese, Chinese, etc. very easily.  You don&#8217;t lose valuable nutrients from traditional boiling or steaming. The trick is to use an anhydrous pot (\u7121\u6c34\u934b), a.k.a. dutch oven.   You only need to spend a few minutes finalizing with fresh vegetables &amp; toppings right before your meal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Anhydrous Pot<\/h2>\n\n\n\n<p>This is one &#8220;must&#8221; tool for the kitchen.  It is versatile &#8212; can be used over the stove or in the oven, and great for soups, stews and all sorts of other dishes.  The anhydrous pot, sometimes called &#8220;dutch oven&#8221;, is a thick-walled pot with a tight-fitting lid.  There are many brands available, such as Le Creuset, Vermicular, Staub, but my favourite is Silit by &#8220;WMF&#8221; (picture below). You can use your favourite ready-made dressing, as long as it has oil (if it is non-oil, just add some).  A rule of thumb is to put spices in \u2460, and fresh herbs in \u2464<\/p>\n\n\n\n<figure class=\"wp-block-table is-style-stripes\"><table class=\"has-subtle-pale-blue-background-color has-background\"><thead><tr><th class=\"has-text-align-right\" data-align=\"right\"> <\/th><th> <\/th><th class=\"has-text-align-right\" data-align=\"right\"> <\/th><th> <\/th><th> <\/th><th>Comments<\/th><\/tr><\/thead><tbody><tr><td class=\"has-text-align-right\" data-align=\"right\">1<\/td><td>tbsp. or<\/td><td class=\"has-text-align-right\" data-align=\"right\">15<\/td><td>mL<\/td><td>oil<\/td><td>Some recommendations:<br>&#8211; olive oil (French or Italian style)<br>&#8211; sesame oil (Japanese or Chinese style)<\/td><\/tr><tr><td class=\"has-text-align-right\" data-align=\"right\">1<\/td><td>tbsp. or<\/td><td class=\"has-text-align-right\" data-align=\"right\">15<\/td><td>mL<\/td><td>vinegar<\/td><td>Some recommendations:<br>&#8211; champagne vinegar<br>&#8211; sherry vinegar<br>&#8211; apple cider vinegar<br>&#8211; balsamic vinegar<br>&#8211; rice vinegar (for Japanese style)<br>&#8211; Chinese black vinegar (for Chinese style)<\/td><\/tr><tr><td class=\"has-text-align-right\" data-align=\"right\">1\/3<\/td><td>tsp. or<\/td><td class=\"has-text-align-right\" data-align=\"right\">5<\/td><td>mL<\/td><td>salt<\/td><td>&#8211; can replace with soy sauce for Japanese style<br>&#8211; flavoured salts can be used<\/td><\/tr><tr><td class=\"has-text-align-right\" data-align=\"right\"><\/td><td><\/td><td class=\"has-text-align-right\" data-align=\"right\"><\/td><td><\/td><td>spices<\/td><td>Some recommendations: <br>&#8211; bay leaf (1)<br>&#8211; ground black pepper (1 tsp. \/ 5 mL)<br>&#8211; mustard seeds (1 tsp. \/ 5 mL)<\/td><\/tr><\/tbody><\/table><figcaption>Seasoning<\/figcaption><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Step \u2461 &#8211; Add Vegetables to be Steamed<\/h3>\n\n\n\n<p>Cut vegetables to be steamed into bite-size pieces &amp; place into the pot, and mix so that all the pieces are covered with the dressing. Here are some of my favourites:<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Basic:<\/h4>\n\n\n\n<ul><li>Japanese turnip (Turns out so juicy! &#8212; make sure to cut into bite-sized wedges)<\/li><li>Snap garden peas or snow peas<\/li><li>Paprika \/ Capsicum \/ Green pepper<\/li><li>Celery stalks<\/li><li>Mushrooms<\/li><li>Baby corn<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Japanese Style:<\/h4>\n\n\n\n<ul><li>Myoga (\u8317\u8377) &#8211; Japanese ginger (this can be cut into quarters and added here, or chopped finely and added as a finishing herb)<\/li><li>Lotus root (so crunchy!)<\/li><li>Shiitake mushrooms<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Step \u2462 &#8211; Heat<\/h3>\n\n\n\n<p>Cover with lid, and place over medium heat for 3 minutes, then remove from heat.  <strong><em>Don&#8217;t open the lid<\/em><\/strong> until Step \u2464.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step \u2463 &#8211; Let sit<\/h3>\n\n\n\n<p>Let the closed pot sit and cool for at least an hour.<\/p>\n\n\n\n<p>I take advantage of this time to forget about the salad and do something else.  Since you aren&#8217;t using any heat in this step, you can safely leave your house. When I return home, I just go straight to Step \u2464 and have supper ready in minutes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step \u2464 &#8211; Finalize: Add Fresh Vegetables &amp; Toppings<\/h3>\n\n\n\n<p>Open the lid, mix in finishing fresh vegetables, herbs &#8212; place on serving plates &amp; add toppings.   You can serve in small plates as a side dish, together with a pate or terrine as a fancy appetizer, or on a large dinner plate with hearty toppings such as chicken, ham or tuna as a light supper.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Finishing Fresh Vegetable Examples:<\/h4>\n\n\n\n<ul><li>Cucumber<\/li><li>Tomatoes \/ Cherry Tomatoes<\/li><li>Lettuce \/ Baby Greens \/ Kale<\/li><li>Edible Flowers<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Herbs:<\/h4>\n\n\n\n<p>Herbs are not necessary, but takes the salad to the next level.
